Easy Gluten Free Superfruit Pancakes



Earlier this year I joined Barlean’s Blogger Team! I first discover Barlean’s last spring at the Natural Products Expo West and I have been obsessed with the brand ever since.

One of the many reasons I’m very excited to join the team is because they’re all about being creative & healthy!

So this month in partnership with their #Brunchwithbarleans campaign I decided to create the most scrumptious gluten free pancakes with Barlean’s Superfruit Blend & Organic Coconut Oil!


I honestly don’t think I’ve ever been so in love with a pancake! These puffy cakes are seriously out of this world & super simple to make!



  • 1/2 cup gluten free flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp pumpkin pie spice
  • 1 Tbsp Barlean’s Superfruit Blend
  • 1/2 Tbsp Barlean’s Coconut Oil
  • 1 tsp vanilla extract
  • 1 egg

TOPPINGS (optional)

  • ground cinnamon and/or pumpkin pie spice
  • chopped bananas



  1. To a large mixing bowl, add all dry ingredients and whisk to combine.
  2. Next melt coconut oil in microwave. 15 seconds should do the trick. Then add the rest of the ingredients together. Let batter rest for 5 minutes while you preheat your cooking surface.
  3. Preheat a large skillet on medium heat on the stove stop. You want the surface to be hot but not piping hot.
  4. Lightly grease your griddle with Barlean’s Coconut Oil & pour 1/4 cup measurments of batter onto the skillet. There should be 3 pancakes. Flip when bubbles appear in the middle and the edges turn slightly dry.
  5. Cook for 3-4 minutes more on the other side and/or golden.
  6. Top with bananas, syrup & pumpkin pie spice or whatever your heart desires!
  7. ENJOY 🙂

These are some of the questions I have gotten since I began to transform my body into a healthier being back in the Fall of 2015.

During the Summer of 2015 I lived in London while completing my thesis for my Master’s degree. Everything about that time was a dream. As someone known for their love of living in London, I had no real complaints. EXCEPT! I felt so uncomfortable in my own skin. I desperately just wanted to love myself. I felt like my big bones and genetics doomed me forever. There was no way I could love my body and with that, I didn’t understand how anyone else could love my body.

I remember so vivid being inside the Forever 21at Westfield London. Staring at myself in the mirror thinking this is the best it’s going to get. I felt like a sack of potatoes. Harsh… YES! But it’s true. And yet, I kept living my Best Life in London. I finished my Master’s, I went on an incredible date that included being kissed in the middle of Picaddily Circus at 2am and I got to have a brief stint of living in Chelsea. But that dream had to come to an end because my visa was about to expire. So I board my plane back to Seattle with an unknown future.

It’s funny, you don’t realize how easy it is being a kid or even a teenager or a college student until it’s gone. Because when it ends, the future becomes 100% unpredictable. You don’t if you’ll find a job right away and you have no clue how to actually meet someone in person. It can be a very shocking experience. I will be the first to admit, I hated it. The realization that student was no longer my goto title killed me. So in the Fall of 2015, I moved back into my parents’ basement (truth be told my childhood bedroom is in the basement, but you get what I’m trying to say). I had no plans except maybe move back to LA in the New Year. However, I had 3 months to figure life out.

I didn’t figure life out, but I decided that after following Kayla Itsines & a bunch of BBG Girls I would at least try to jump on the fitness train. And like all BBG Girls, I started an Instagram account as well.

It’s now been over two years since I started BBG. I have had ups and downs and new begins and failures and I have learned a lot. But one thing I know for sure is, sometimes I forget why I started. So I have decided to start a blog post series about my journey, reflecting on 4 weeks at a time because that’s how often Kayla suggests taking progress pictures. This is My BBG Journey and this was my first four weeks of daily rambles.

How to Stay Fit During a Trip to Reno

Are you planning a trip to Reno and wondering if you’ll be able to stay fit in the city? Reno might be famous for its casinos and incredible eateries, but you won’t have to hide in the gym to keep up with your exercises.

If you’re visiting Reno during the winter, you can spend the day hitting the slopes for some snow sports. In the other months, you can go kayaking in the Truckee River, go hiking in the many surrounding trails, or even go mountain biking. Discover some of the best activities you can do to stay fit in Reno.

You don’t have to go far to enjoy outdoor activities in Reno, as the Truckee River runs through the middle of the city. Truckee River Whitewater Park is located east and west of Wingfield Park and runs for 2,600 feet. It has class 2 to 3 rapids with 11 drop pools, and it’s ideal for beginners, as there are many access points throughout the course.

Discover the Hiking Trails

The region surrounding Reno is the perfect place for those who love hiking. You could go for an easy 2-mile hike or take the long Jones/Whites Creek Loop, which spans 9.2 miles. The most popular hike is the Hunter Creek Trail, where you’ll find a hidden waterfall, but for amazing views of the city, go to the Huffaker Hills.

Enjoy World-Class Rock Climbing

Did you know that Reno has the tallest climbing wall in the world? Head to BaseCamp in Whitney Peak to find this 164-foot monster. A short drive will take you to Lake Tahoe, where you can find Big Chief and Donner Summit, two high-quality climbing spots.

Explore Reno by Foot

Pick up a Reno city guide, and you’ll quickly see that there’s plenty to do in the city, especially if you want to explore on foot. You could walk along the Truckee River, visit the National Automobile Museum, and explore the art galleries and shops in the Reno Riverwalk District.

Practice Snow Sports During the Winter

Reno is famous for being an excellent location for snow sports. If you happen to visit during the winter, you can spend the whole day snowboarding, cross-country skiing, or snowshoeing, burning as many calories as possible.

Feel the Thrill of Mountain Biking

Another great way to stay fit in Reno is to get dirty and go mountain biking along the trails around the city. You can go to Peavine Trail for some great views of the city or drive to Flume Trail and Tahoe Rim Trail if you’re looking for challenging descents.

It’s not always easy to stay fit when you’re traveling, as not every city offers many outdoor activities. If you’re heading to Reno, however, you’ll find that the possibilities are endless. Take the time to plan out your activities each day, and you can exercise in your choice of fun and entertaining ways during your Reno visit.


Now I realize posting my goals for 2018 a sixth of the way through the year sounds ridiculous and a bit late to the party, however 1) YOLO 2) I don’t care what other people thing and 3) I have become a firm believer that if you want things to happen, you have to put them out into the universe. Because nothing can manifest if it is not announced to the WORLD.

#UpForAnything Challenge with Athleta

When Athleta challenged me to join their #UpForAnything campaign with a friend, I jumped at the opportunity! Not only is their mission to ‘ignite a community of active, healthy, confident women and…empower them to realize their limitless potential,’ their clothing is line is chic and comfortable and the challenge was to try something you’ve never done before! Who doesn’t love exploring new things?!


But, at first, I was stumped by my quest. There are hundreds of fitness studios in LA, however finding something exciting and different proved to be a tad difficult. However I soon remembered an episode of Made In Chelsea: LA where they worked out on surfboards and realized WE HAD TO DO JUST THAT!

Processed with VSCO with s1 presetAs for my friend joining the challenge, I brought along the amazing Paige! Paige and I met over 2 years ago at my first BBG event in LA. We are totally those girls who met on Instagram 😉


Now per our usual promptness, we arrived exactly when class started instead of 15 minutes early like normal person should. I’ve been told that optimistic people are ALWAYS late… However our instructor, Katie, was phenomenal and helped us get register and ready within minutes of arriving and we were off to the races, or ready to hit the waves.

OVERALL: Music was awesome. A bit of everything from old school to present day to even Sir Mix-a-Lot Baby Got Back. The class was CRAZY HARD. But very much worth it! A huge part of the course was balancing. Honestly I sometimes had to simply forgo the actual workout move just to focus on not falling off the board!

RECOMMEND: Most definitely! It’s so different from anything else I have ever done and they have lots of different classes at the studio too! From TRX-style to Sandbox Barre.

I’m so happy Athleta challenge Paige & I to try something new! It definitely made us push our limit and once again remind us that we are stronger than we think.

While January is coming to an end, I cannot wait to keep the mentality of #UpForAnything for the next 11 months as well! It’s just the beginning and I have so many more exciting dreams in mind of 2018, however the only way I’m going to be able to achieve them is with a mentality that my dreams are limitless!

3 Tasty Turkey Burger Recipes

Earlier this week I mentioned how I’m aiming to get my fitness back in order, well along with that is getting my diet back in order!

Now I’ve considered many ways to reboot for the New Year. There’s the Whole30 diet, Keto, Paleo, Intermittent, etc…. But after careful consideration I have decided to do NONE of them! That’s right, I’m quitting the diet fads and aiming for something crazy different. It’s called… Healthy Eating!

Insane concept right? 2018 for me is all about Balance. Balance of the mind, body, soul and food. Whenever I join a trend I never seem to find the balance of it all, so I’m aiming to just do me. And instead of restricting foods, I’m aiming to find new ways to make my favorite things healthier. For example, mixing up my BURGERS!

Now when Foster Farms asked to collaborate with me, I jumped at the chance! Especially because I’m a West Coast Gal and I love eating local products. However I wasn’t sure what to cook. But after a little turn of the wheel I realized the possibilities were endless with BURGERS!

While I’m gluten free and trying to stray away from breads at the moment this tasty burgers would be even better on a bun or even on top of a divine salad! Endless choices guys! ENDLESS!

Below you find three recipes:

  • Turkey Apple Burger
  • Jalapeno Burger
  • Garlic Bacon Burger


Turkey Apple Burger



  • Olive Oil
  • 1 pound Foster Farm Organic Ground Turkey
  • 1 Apple
  • 1 teaspoon Thyme
  • 1 teaspoon Garlic Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Pumpkin Pie Spice (aka ginger, nutmeg, cinnamon & cloves)
  • 1 tablespoon Balsamic Vinegar


  • Slice of Cheese (preferably Swiss or Pepper Jack)
  • Caramlized Yellow Onions or Raw Red Onions



  • Finely chop or grate the apple and place in a large bowl. Add the ground turkey into the bowl. Sprinkle the thyme, garlic salt, pepper, pumpkin and balsamic vinegar over the meat. Using your hands, combine the meats, apple, and seasoning until well disbursed.
  • Divide the meat into ¼ pound sections and shape into patties.
  • Heat a frying pan) to medium/high heat. Once the skillet is heated, add the patties and sear for about 4-5 minutes per side (until the turkey is 165 degrees Fahrenheit).
  • Serve with a few onion slices and a melted piece of cheese on top of each burger!


Jalapeno Turkey Burger



  • 1 pound of Foster Farm Organic Ground Turkey
  • 1 Jalapeno Pepper, minced
  • 1 Shallot, minced
  • 2 Limes
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Salt
  • 1 teaspoon Pepper


  • Guacamole
  • Salsa




  • Mince the jalapeno and shallot and place them in a large bowl. Add the ground turkey into the bowl. Squeeze the juice of the limes over the meat. Sprinkle the cumin, garlic salt and pepper over the meat. Using your hands, combine the meats, apple, and seasoning until well disbursed.
  • Divide the meat into ¼ pound sections and shape into patties.
  • Heat a frying pan) to medium/high heat. Once the skillet is heated, add the patties and sear for about 4-5 minutes per side (until the turkey is 165 degrees Fahrenheit).
  • Serve with a dollop of guacamole and a spoonful of salsa on top of each burger!


Garlic Bacon Turkey Burger



  • 1 pound of Foster Farm Organic Ground Turkey
  • 1 tablespoon Garlic
  • 1 teaspoon Pink Himalayan Sea Salt
  • 1 teaspoon Pepper


  • Avocado

  • Mince the garlic and chop the bacon and add them both in a large bowl. Add the ground turkey into the bowl. Sprinkle the garlic salt and pepper over the meat. Using your hands, combine the meats, apple, and seasoning until well disbursed.
  • Divide the meat into ¼ pound sections and shape into patties.
  • Heat a frying pan) to medium/high heat. Once the skillet is heated, add the patties and sear for about 4-5 minutes per side (until the turkey is 165 degrees Fahrenheit).
  • Serve with a slices of avocado on top of each burger!

Gym Bag Essentials: 2018 Edition




Happy New Year Lovelies!



I cannot believe it’s 2018! INSANE! I’m planning on doing a 2018 Bucketlist Post in a few weeks that will include a reflection on 2017, however until then all I can say is 2016 was crazy, 2017 was transitional and 2018 is going to be the year we SHINE!

But seriously guys, I can feel it! 2017 was RIDICULOUS to say the least. The ups and downs were intense, there were a gazillion dates, I feel off the fitness wagon one too many times and traveled way less than my heart desired. So 2018 is gonna be the year to really SLAY!


My first order of business is getting back in the GYM to work on my FITNESS! TBH, today was actually my first day back…. whooops

Admittedly I’ve been off to a bit of a slow start, but you know what they say… Slow and steady wins the race, right? RIGHT! So we’re making waves and to inspire you and mostly myself I thought I’d start working on my Gym Bag Essentials first and make sure they are packed and ready to go in the evenings so when I want to be that pup above trying to crawl out of bed in the morning, I can be more like this gal.

#1: Wrigley Alert Caffeine Gum

Are you a morning person? NO! I’m the I really need a boost in the morning kind of person! It’s crazy how times have changed but can I say I’m very grate caffeinated gum is a thing! These guys pack as much caffeine as 1/2 cup of coffee and are awesome when you’re short on time and can’t make your morning joe or are feeling your patience running thin at the drive-thru!


Alert is a caffeinated chewing gum for adults and gives you that perfect boost when you need it. They are also super handy when you need a boost and just don’t feel like drinking anything and would rather just chew.

Do you ever get in that mood? Ok, cool, me too!


#2: Apple Watch

Yep… I’m officially one of THOSE people. I can’t believe I feel for it. An Apple Watch now resides on my wrist. Seriously? Now before you give up on me or consider losing hope for humanity (there’s other people who can do that), I have to say it’s growing on me.

I’m one of those people who prefers to carry less so on days when the phone can stay in the car while I run or just don’t like to be attached to their phone at all times. It is pretty nice. Plus it’s just like every other fitness tracker in the fact that it catches all your vitals. I think it’s pretty handy, but stay tuned for my year later review haha

#3: Headphones

A no brainer essential and yet I seem to forget it half the time and then go between deciding if I should workout without music, try and play my music with no headphones or just go home because like, what’s the point of working out without music!

These guys are a keep, like any bluetooth pair nowadays because 1) None of my headphones can plug into my phone anymore and 2) if I decide to not have my phone… I can use my Apple Watch and listen to my music still! See there are benefits 🙂

#4: Fanny Pack

This essential is more helpful when I’m out running, but sometimes I really like having a running belt when I’m lifting or around any of the weight equipment. When you’re trying to slay it with a 20-pounder and your sweating like you just took a shower, it’s nice not having to worry about where your keys and phone or whatever personal items you need to carry around the gym… aka lady products!

#5: Hair Ties

Heavens new life saver are these hair ties! I kid you not! I know. I know. They look like the old school things you used to carry your keys on, NOPE. Even better they will not pull on your hair nor will they leave creases in it. Crazy? Yes. True? Yep!

The best part about these guys is the fact that you can wear them around like a bracelet and they won’t dig into your skin! It’s pretty fantastic.

I solemnly swear that I am up to no good.

Alex and Ani just released a new Harry Potter line and the internet is sorta freaking out… Or more so, I’m freaking out!

It’s been 6 years since the last Harry Potter film was released and the void is sometimes very hard to fill. However tiny reminders like these quickly throw me back to the good ol’ days and it makes it not so unbearable *Cue Dramatics*

3 Healthy On The Go Snacks!




Lately, I’ve been feeling like that’s an impossible task.

The past few months have been a complete whirlwind with the production & post of Tacompton. Life’s been just go, go, go. And because of that, there have been consequences. Like me countlessly dropping things, multiple times locking myself out of my house, spills, mishaps, constantly late, text message errors, spelling errors…Yes, I’ve been hustling and getting things done, but on the tail end of that has been me… a total HOT MESS.

Now I’m sure you’re wondering what Shine Organics, has to do with me being a HOT MESS. And to be honest I wasn’t sure at first either. But then I realized they have literally been my saving grace over the last week! Not only does the Calm Shine Organics literally calm me, it provides me with all the nutrients I need in between my crazy moments.

Little did I know when I picked up these guys at Target this past Saturday that they would keep me from being HANGRY, calm me when I locked myself out of my apartment & the perfect replacement at work when my frozen grapes had gone bad.

Well because I missed it. I hadn’t been there in ages & I knew I wanted to wander about. Relax a moment. Probably find something I  didn’t need, but would convince myself otherwise (side note: I did… definitely bought a new dress hehe). Target’s the best place and has all the greatest things.

Well, I don’t know if you’re aware, but it’s officially OCTOBER. AKA Halloween time & one thing that is very tempting at Target is the Candy Aisle. Cue Exhibit A to the LEFT!!!

Now I have self-control, I do. I swear. And I’m not just trying to prove it to you. But Halloween & just the holidays, in general, can leave me extra snacky. Is snacky a word? It is now.


Anyways, luckily, as I began to wander through the aisle of beautiful candy I saw Shine Organics from across the way. Cue SAVING GRACE #1.

There they were just waiting for me. Much more exciting than the rest of the things in the applesauce aisle (not that I don’t love applesauce), however seeing as I’ve been trying to live a healthier lifestyle and I was getting on the hangry side from running errands all day I decided it was probably best to indulge in  Shine Organics over candy 😛
